Prep Time: 15 min

Cook Time: 60 min

  • 2 medium sized sweet potatoes, peeled and cut into small cubes
  • 2 turnips, peeled and cut into small cubes
  • 1 large onion, peeled and diced finely
  • 3 ribs of celery, trimmed and cut into 1/4" pieces
  • 1/2 package fresh button mushrooms, stemmed and quartered
  • 1 apple, peeled, cored, and cut into small cubes
  • 2 tsp garlic powder
  • 2 tsp ground sage
  • 1 tsp each of rosemary, thyme, and oregano
  • 1 tsp ground turmeric
  • 1 tsp fresh ground black pepper
  • salt to taste
  • 3 tbsp extra virgin olive oil

  1. Preheat oven to 375 degrees. In a bowl, combine sweet potatoes and turnips with garlic powder, ground sage, rosemary, thyme, oregano, turmeric, ground black pepper, salt, and olive oil. Layer evenly on a baking sheet and roast for approximately 45 min, or until slightly browned.
  2. While those are in the oven, add onion, celery, and olive oil to medium-high heat in a large skillet. Once softened and fragrant, toss in the mushrooms and apple. Feel free to add more of the above spices and cook until completely cooked through.
  3. Once sweet potatoes and turnips are roasted and lightly browned, add them to the skillet and combine well with all the other vegetables. Serve immediately for maximum freshness.
