Roasted Brussel Sprouts with Pomegranate Seeds and Walnuts

Ingredients

  • 2lbs brussel sprouts, trimmed and halved

  • 2 tsp apple cider vinegar

  • 2 tbsp maple syrup

  • 1 tsp olive oil

  • 1/4 tsp sea salt

  • 1 cup pomegranate seeds

  • 1/2 cup fresh walnuts, chopped

 

Instructions

  1. Preheat oven to 375 degrees. Line baking sheet with parchment paper.
  2. In a bowl, add brussel sprouts, apple cider vinegar, maple syrup, olive oil, and sea salt. Mix to combine. 
  3. Spread brussel sprouts on baking sheet in a single layer. Bake for 25-30 minutes, or until edges of brussel sprouts are lightly brown. 
  4. Transfer brussel sprouts to a bowl and mix in pomegranate seeds and chopped walnuts. When ready to serve, season with salt and pepper to taste.
