Raw Walnut Taco Wraps with Fresh Pico de Gallo

Ingredients

Walnut Taco "Meat"

  • 1 1/2 cups of raw walnuts
  • 2 tsp of coconut aminos
  • 1 1/4 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Butter lettuce 

Pico de Gallo 

  • 2 medium sized roma tomatoes, finely diced
  • 1/3 cup cilantro, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 medium sized jalapeno, finely chopped
  • Juice of 1/2 lime
  • Salt and pepper, to taste 

 

Instructions

For the Walnut Taco "Meat"

  1. In a food processor, add raw walnuts and blend until crumbly, or texture mimics cooked ground beef. 
  2. Add coconut aminos, ground cumin, garlic powder, and cayenne pepper. Pulse until combined. 
  3. Layer butter lettuce into sturdy cups and fill with taco "meat".
  4. Top with our fresh pico de gallo. 

For the Pico de Gallo

  1. Add all ingredients in a bowl and combine well. 
  2. Season to taste with additional salt, lime, or cayenne. Serve immediately for optimal freshness.
